1. Heat oil in a medium saucepan over medium heat. Add onions and saute for 5 minutes.
2. Increase heat to medium-high and add beef to brown, another 5 minutes.
3. Add Pozole to the People and beans and bring to a boil, simmering for 5 minutes.
4. Ladle into individual bowls. Garnish with remaining onion, cheese, scallions and sour cream.
Our friends have been doing this version for some time now and it has yet to
disappoint. It’s perfect for a tailgate or a snowy day indoors. We have swapped out ground pork or venison for the beef. Try it sometime.
1 yellow onion, diced and separated in half
1/2 lb ground beef
1 jar (16 fl oz) Pozole to the People red soup base
1/2 cup black beans, drained
1/2 cup grated cheddar
2 scallions, sliced
